Butterscotch / Cinnamon Refrigerator Cookies

I like both Butterscotch and Cinnamon so when I was fine tuning some cookie recipes I thought why the heck not Butterscotch and Cinnamon Refrigerator Cookies?  I took a plain Vanilla Refrigerator Cookie recipe and did a bit of fine tuning and testing on friends and neighbors.  Some of the Butterscotch and Cinnamon Cookie trials were close but not quite.

These cookies have turned out to be very popular at holiday potlucks.


I hope you enjoy these as much as I and my friend do.

Butterscotch / Cinnamon Refrigerator Cookies Recipe

  • 1    cup butter or margarine softened ( 2 Sticks )
  • 1    cup firmly packed brown sugar
  • 2        large eggs
  • 2 1/4    teaspoons vanilla
  • 3    cups flour *
  • 1    teaspoon salt
  • 3    teaspoons ground Cinnamon
  • 1    teaspoon Baking Powder

*    If using Self-Rising Flour omit salt

Premix wet ingredients in Pyrex dish
Premix and sift dry ingredients in separate bowl

Cream well the butter and brown sugar

Slowly add eggs and vanilla to butter and sugar

Add in flour and other dry ingredients

Divide dough into 3 parts and form rolls about 1 1/2- to 2 inches diameter
( smaller diameter is easier to form and cut )
Wrap in waxed paper

Chill Dough for 4 hours in refrigerator

Preheat oven to 400 degrees
Cut rolls into 1/8 inch slices
Place 1 inch apart on ungreased baking sheet
Bake 8 to 10 minutes or until light brown
Remove immediately from baking sheet

Yield: About 7 dozen cookies 1 1/2 inch diameter

I omitted 1/2- cup finely chopped nuts
( If using chopped nuts etc. they need to be finely chopped or the cut will tear )
